So I loved previous versions of FG because I could bring up the capture window and select which media files to snag from the page. And I could rename them.
Why are these features gone?
Renaming
Many times streaming videos have long file names, that include a long string of alphanumeric characters. It's a pain in the neck to go back and rename these suckers after they've been saved to my video folder. Naming them at the download point is much more convenient.
Automatically saving all streams
This is probably worse than the above issue. I don't have the option any more of choosing which stream to select. Some pages contain quite a few videos, and I only want one of them. Again, why was this removed?

Not sure I'm understanding.
FlashGot has no "capture window" & no method to rename any files.
FlashGot Media can give you a list of streams it has detected - on hover or right-click, so that you can choose which to download, or you can download all - by left-click.
URL of this page of videos?
Do you get the FlashGot Media icon on the Status Bar (Add-ons Bar)?
