is it possible to age out sites from the whitelist
I was cleaning out my noscript whitelist of sites I no longer use. I was thinking it might be nice to either have sites that have not been accessed in a long time either drop from the whitelist or maybe change color in the list. They could then be easily targeted for removal.

The usual suggestion is don't permanently whitelist a site unless you go there regularly. If you only need to visit a site once, then temporarily allow it. Permanent whitelisting should be for sites you use all the time, like your webmail, bank, maybe search engine. Sites like those don't need to be aged, and sites you only visit once shouldn't really make it onto the permanent whitelist at all.
