Why there is no entry for "forbid all sripts in page" : when allowing by mistake not temporarly but permanently the page, one have to forbid all scripts one by one ?

Hang on. So you're concerned about mis-clicking - which I agree is a problem - and your answer is to add a menu item which obliterates all whitelist entries on the current page?
People who feel prone to mis-clicking, as I do at times, should rather just deselect the 'Allow all this page' option from NoScript Options > Appearance. The same functionality is available through 'Temporarily allow all this page' followed by 'Make page permissions permanent'.
