Clicking on the NoScript icon, I see no Untrusted menu, nor can I find that by clicking "Options".

NoScript Options | Appearance, there are a couple items in there dealing with 'Untrusted'.
Enable them & they should then show up.

Do you have "Untrusted" and "Mark [...] as Untrusted" both selected in NoScript Options > Appearance?
If so, on the site where you want to Mark something Untrusted, can you please post a screenshot of your NoScript menu?
