Why is it better to copy-and-paste a link than to merely click on it, as I have read some say?

Heard the same thing.
referrer points back to you, just like a ping request.
saw it referenced on a Tor routing story, from folks that were trying to hide.

Actually, the best option is probably to select the link text (by clicking and dragging) and paste that.
