Hi, newbie here...
I came across session-replay scripts on another website besides arstechnica (which I have bookmarked), and my reaction was
the same as yours.
I have no formal IT education, but I have managed to prevent any of my PC's over 15 years from being compromised.
Question: Does NoScript block SRS by default?

I would say yes.  This stuff requires active content and NoScript blocks scripts by default.
